Grandma’s Roast Beef Salad

Jon’s grandma is known amongst the family for her delicious Roast Beef Salad. I had never heard of it until I met Jon. The whole family raves about it. We called Grandma to ask her for the recipe, and she told us over the phone how to make it. After she had talked to us, she decided it sounded pretty good. So, while we were visiting in Ohio, she invited us , Jon’s parents, and brother and sister-in-law over for Roast Beef Salad. We all quickly accepted the invitation. It was actually my first time having Roast Beef Salad, and it was delicious.

 
A few months prior, I had gone to my in-laws’ neighborhood parking lot sale. Residents of the community come and sell their “unwanted” items. I go every year and hunt for vintage kitchen items. This year I found a hand-crank meat grinder.

 
Everyone in Jon’s family swears, that the secret to Grandma’s recipe is hand-grinding the meat. Needless to say, I bought that meat grinder faster than I’ve ever bought anything before in my life.

 
Roast Beef Salad is pretty easy to make. You only need three ingredients: Beef roast that is already cooked, mayonnaise, and sweet pickle relish. From there you can make sandwiches or put in on some crackers (or even straight from the bowl…shhh…I won’t tell if you do).

 
*For the beef, I used a top round roast that had been cooked in a slow-cooker until cooked through. I used only about half of the roast since that is what I had as leftovers.

 
*This is a recipe with no exact amounts. Use as little or as much of each ingredient as you like.

 
Ingredients:

Beef Roast-cooked through (I used a top round or bottom round roast)
Mayonnaise
Sweet Pickle Relish
Bread, buns, or crackers to serve

 

Cut the beef into 1/2 to 1 inch cubes.

 


Grind the meat in a meat grinder to a fine consistency.

 


In a bowl, combine the beef, mayonnaise, and relish.

 


Stir to combine.

 


Serve on sandwich buns or on crackers.

  1. This is similar to what my mother and grandmother made, but they always added hard-boiled eggs.. my grandchildren love it. I can’t imagine having it without eggs added.

  2. Why isn’t this an American staple? I chopped leftover round roast by hand and thought about just adding mayo when I saw this recipe. Delicious on toast or plain crusty bread. So easy to chop by hand with a sharp knife.

  3. I’m 80 years old and have made this recipe since I was first married. I use sweet pickles but I have used relish. My Mom made it when I was a grade schooler. I also use left over pork and make Pork Salad.

  4. My beloved Midwestern Kansas grandmother used to run just about anything through the meat grinder to make “salad.” That once included hot dogs and American cheese that she mixed with mayo and served to us grandkids on white bread. She’s long passed and I’m well into middle age but as I looked for a recipe to use up some holiday roast and make a “salad,” yours came up and took me back. I just made it (with a food processor). Simple, tasty, and above all nostalgic. Cheers!
