It is safe to say that most southern-style restaurants have a po’boy sandwich of some sort on their menu. If you aren’t familiar with the sandwich, usually they are a sandwich topped with fried shrimp, oysters, or some other kind of meat. They are usually topped with sandwich fixings such as: Lettuce, tomato, and a mayo, or other sauce (there are many variations of toppings).

Shrimp Po’ Boys are my favorite version of the sandwich. I prefer to have shrimp (and other seafood) not fried. For our po’boys, we’ve made Buffalo Shrimp Po’Boys!

The sautéed shrimp gets smothered in a sweet and spicy honey buffalo sauce, then placed over a bed of shredded lettuce and tomato, all on top of a hoagie bun. Drizzle on a little ranch dressing, and it brings the sandwich over the top, delicious!

Ingredients:
1 tbsp unsalted butter
½ lb uncooked, medium shrimp (peeled, tails removed, and deveined)
¼ tsp salt
¼ tsp ground black pepper
1 and ½ tbsp honey
1/3 cup hot sauce
1/3 cup chopped tomato
1 cup shredded lettuce
12 inch hoagie bun or submarine bun
¼ cup shredded mozzarella cheese
Ranch dressing for optional drizzle

Add shrimp to saute

Melt the butter in a sauté pan on medium heat.  Season the shrimp with salt and pepper.

Sauté the shrimp in the butter until the shrimp are cooked through and are opaque.

Honey Buffalo Sauce

Stir the honey and hot sauce together in a bowl.

Pour the honey and hot sauce over the shrimp and cook about another 30 seconds to 1 minute.

Assemble the sandwich by spreading the lettuce out onto the bottom half of bun.

Top with tomato.

Top with the Buffalo shrimp.

Cheese on buffalo shrimp

Sprinkle the mozzarella cheese over the shrimp. Drizzle on ranch dressing if you like.

Cut the Buffalo Shrimp Po’Boy sandwich into 2-6 inch portions.
