As with a lot of people, due to the pandemic, we’ve been staying home more and not eating or drinking out much. Because of that, I’ve been missing my favorite place to go and get a smoothie on the weekends. My dad and I found a smoothie place here in town while he was visiting. We decided to go in and try it. Big mistake! I became addicted immediately. Jon and I drove by the smoothie place a couple of weeks ago, and I instantly wanted one. Oh, how I miss them! In my own true fashion, I got to work figuring out how to make my own version right at home. Let me tell you, it is just as good as the smoothie shop. It is so good; I’ve made it three days in a row! My Strawberry-Lime Smoothie is made with fresh strawberries, fresh lime juice, ice, and simple syrup (equal parts sugar dissolved in equal parts water). The smoothie is sweet, fruity, and refreshing. (If you’re of legal drinking age, a shot of rum, or tequila would be delicious mixed in too!)
Ingredients:
¾ cup ice
1 cup chopped strawberries
Juice of 1 lime
¼ cup simple syrup
Combine the ingredients in a blender (one that can handle ice) and blend, according to the manufacturer’s instructions, until smooth. Pour into a serving glass and enjoy!
