Orange Margarita

Somehow limes didn’t make it onto last week’s grocery list.  I honestly didn’t think about Cinco de Mayo coming up. And….what do you know….Cinco de Mayo was yesterday and I was all out of limes to make my fresh margarita!  What’s a girl to do?  I opened up the refrigerator and saw the bag of caracara oranges!  THOSE WILL MAKE FANTASTIC MARGARITAS!  (If you have never had caracara oranges, they are sweet and tend to not be as acidic as other oranges.  I LOVE these oranges!)

Cinco de Mayo was spent at home this year.  We made grilled chicken tacos, baked refried beans, Mexican style rice, and of course I needed that margarita to top it all off!

Ingredients:

Juice of 2 caracara oranges

Juice of ½ lime

1oz simple syrup (equal parts water and sugar dissolved)-use less or more depending on your sweetness preference.

1 and ½ oz silver tequila

½ oz Orange liqueur

½ oz triple sec

Ice

Margarita salt (optional)

Fill a shaker halfway with ice.  In the shaker, combine the orange and lime juices, tequila, orange liqueur, triple sec, and simple syrup.  Shake the mixture for 30 seconds.

Run the lime around the rim of a glass.  Dip the glass into the margarita salt to rim the glass with salt.

Add ice cubes into the salt-rimmed glass.  Using a strainer, strain the margarita mixture into the glass over the ice.  Garnish with an orange wedge if you like!
