Carolina Swamp Fries

         

       A couple of week’s ago, we packed up and went to Disney World so I could run in their Marathon weekend’s 5K race.  It was SO much fun!  I would do it all over again in an instant.  We stayed on the property and went to the parks and we visited many of the resorts and restaurants.  We were on-the-go, nonstop.  Because of that, before heading back home, we decided to spend a couple of days in Jacksonville to relax some.  We didn’t have any schedule while we were in Jacksonville, we just went and shopped, ate at restaurants, and just hung out.  While we were brewery hopping a bit, we stumbled upon a brewery that served an AMAZING dish called Swamp Fries.  They are French fries topped with pulled pork, bacon, cheese sauce, barbecue sauce, and oddly enough, coleslaw!  OMG! They were so good!

                So, big surprise, I had to re-create them at home, because we ALWAYS seem to have some leftover pulled pork in the house.  Honestly, they really are pretty easy to make if you have the ingredients pre-made, ahead of time.  The pulled pork, was pork shoulder we had leftover in our freezer from one of our cooks on our smoker, the coleslaw was from the deli, the cheese sauce and barbecue sauce was from a jar, and the fries were from the freezer section.  A lot of convenience foods, but when they are put together, they really do make up something special, like these delicious Carolina Swamp Fries!  They are perfect for an appetizer, party food, and even dinner!  Also, the recipe is a use as much of this and that as you like, so you don’t have to really worry about the measurements!

 

Ingredients:

French fries-cooked according to your preferred method (we air-fried ours)

Cooked pulled pork (chopped)

Cooked bacon, chopped,

Barbecue sauce (we used a sweet-heat kind)

Nacho cheese sauce

Deli coleslaw

Drain some of the dressing out of the coleslaw by putting the coleslaw into a strainer over a bowl.  It helps to use a spoon to press some of the dressing out.  Set aside.

On a sheet pan, add the fries in a single layer, top with the pulled pork, bacon, barbecue sauce, and cheese sauce.  Bake in a preheated oven at 375 degrees Fahrenheit for about 5-10 minutes.

Top the fries with the coleslaw just before serving.
