Last week I went to a luncheon as a guest of my mother-in-law for a volunteer organization called Born to Read. They are an organization that works to promote early literacy to parents and children in the Lowcountry. Their trained volunteers visit new parents in area hospitals and bring a gift bag that contains two books and other items. The new parents are given information on the importance of reading and talking with infants and children starting at birth. While at the luncheon, we were given three choices for an entrée. I chose the Chicken Salad. It was not the typical, mayonnaise-based chicken salad; it was a salad with spring mix lettuce, grilled chicken, green apple, dried cranberries, pecans, and cheese crumbles. It was so good that I completely cleaned my plate and secretly wished I could have asked for a second helping. With that said, big surprise…I had to make this at home so I could eat it again.
This is one of my favorite types of recipes because it can be customized to your own tastes. Use as little or as much of an ingredient as you wish or omit and add different ingredients. You can make enough to serve multiple people or just enough for one person.
Ingredients:
Spring mix lettuce
Grilled chicken, cut into bite-sized pieces
Granny Smith apple, finely chopped
Dried Cranberries
Pecans, chopped
Feta or Gorgonzola cheese crumbles
Balsamic Reduction or Balsamic Vinaigrette (A raspberry vinaigrette would be delicious also)
Assemble the salad in a bowl or on a platter by layering the lettuce, chicken, apple, cranberries, and pecans. Sprinkle the cheese over the top and drizzle with the balsamic reduction or balsamic vinaigrette.
