Fresh Margarita

                Today is National Margarita Day!  There was absolutely only one drink to make tonight…a margarita!  Jon and I have been on a margarita kick ever since restaurant week happened.  We went to one of our favorite local restaurants who had their fresh margaritas on special for $4!  You cannot beat a margarita for only $4.  And seriously…they have THE BEST margaritas.  The bad thing, the restaurant is about a 30 minute drive for us, so on a Friday night after working all week, I don’t really want to drive that far, so you know me….I had to make my own to have at home.

                First, you have to start out by making the fresh margarita mix, which is a pretty important step.  This is a small batch mix, so you will only get a few (depending on how large your margarita glass is 😊).  Also, it’s worth the work of squeezing your own limes for lime juice. And remember… Please drink responsibly.

                Margarita Mix Ingredients:

                ¾ cup fine cane sugar

                1 cup water

               1 cup freshly squeezed limes (about 6-8 limes)

                Margarita Ingredients:

                Margarita salt (optional)

               1 ounce silver tequila

               ½ ounce orange liqueur, such as Cointreau, triple sec, or Grand Marnier

                Ice cubes

             1/2 cup  Margarita Mix

To make the Margarita Mix: In a small saucepan on low heat, dissolve the sugar in water, stirring until the liquid is clear.  You now have simple syrup.  Remove from heat, set aside, and let cool completely.  Squeeze the limes into a cup or bowl to get the lime juice, and stir the lime juice into the simple syrup.  Now you have margarita mix.  You can chill the mix in the refrigerator at this point.  (I don’t know how long it will last in the refrigerator, because we usually use it all…soooo….again….please drink responsibly.) Makes about 4 servings.

To make one Margarita: If you’re using salt, rub a lime wedge around the rim of a margarita glass, then dip the rim of the glass into the margarita salt.  Add some ice cubes into the glass.  Add 1 ounce silver tequila and ½ ounce orange liqueur into the glass and stir.  Fill the rest of the glass with 1/2 cup margarita mix.  You now have a fresh and delicious margarita!
