Turkey Buffalo Chili

 

Are you feeling chilly?  It has been an unusually cold winter for us in South Carolina.  While I grew up with cold Midwest winters, for some reason it feels even colder in the South when the temps aren’t even as cold as they are up North.  Burrr!  I’M FREEZING!

How do I combat my chilliness?…With a bowl of warm delicious chili, of course!  I love to cozy up on the couch with a blanket (fresh from the dryer for extra coziness), next to one (or more) of the dogs, with a nice bowl of warm chili!  I’m starting to warm up…finally!

We used a combination of ground turkey and ground buffalo as lean-meat options for this chili.  You’ll never miss the ground beef.  We gave it some spice with some diced tomatoes with chilies and some hot sauce.  Are you feeling warmer yet?

 

Ingredients:

1lb Ground Turkey

1lb Ground Buffalo/Bison

1-28oz Can Whole, Peeled San Marzano Tomatoes (pulsed a few times in a blender or food processor)-you could also substitute for a can of crushed tomatoes.

1-10oz can Diced Tomatoes with Chilies (we used Original heat level; you can adjust to you own tastes if you’d like the Hot or Mild version)

½ Red Bell Pepper, Chopped

½ Green Bell Pepper, Chopped

½ Red Onion (medium size), Chopped

1-15oz can Black Beans, drained and rinsed

1 tbsp Hot Sauce (optional)

Seasoning Mix:

½ tsp Salt

½ tsp Ground Black Pepper

1 tbsp Garlic Powder

1 tbsp Paprika

1 tbsp Chili Powder

    

Preheat a medium-large pot on medium heat.  Cook the ground turkey and ground buffalo, breaking up with a spatula, until cooked through.

Add in the peppers and onions and cook about 1-2 minutes.

Add in the tomatoes with diced chilies and black beans.  Stir in the blended tomatoes (or crushed tomatoes).  Add in the seasonings and hot sauce.  Stir to combine.

Lower the heat to a low simmer and cover the pot with a lid.  Stir occasionally.  Allow to simmer for about 30 min to an hour.

Serve with your favorite chili toppings!
