I love guacamole that is loaded with garlic! I’ll be honest, I never used to really like guacamole nor avocados for that matter. I somehow started eating sliced avocados on sandwiches, then on my Avocado and Egg Toast, and then I became brave and started eating guacamole. Jon is always asking me to make my Garlic Guacamole. I make it at least 2-3 times a week. It’s been a perfect snack with this hot-humid weather we’ve been having lately. (It feels like August temperatures already!) I even convinced my sister to try some (she’s a “selective eater” as she calls it) and now she’s making this recipe a few times a week as well! It’s an amazing thing, what garlic can do!
Ingredients:
1 ripe avocado, chopped, pit and skin removed and discarded
1 large or 2 small clove(s) of garlic
¼ tsp salt, plus 1 small pinch salt to be used separately
1/8 tsp ground black pepper
Juice of ½ lime, fresh
Tortilla chips or pita chips for dipping (your favorite brand)
Finely mince the garlic with the small pinch of salt.
Place the chopped avocado, lime juice, ¼ tsp salt, 1/8 tsp ground black pepper, and the minced garlic salt mixture into a bowl or in a mortar and pestle.
Using a fork or the pestle, smash the avocado mixture until smooth (or to your desired consistency). If you like to leave some of the avocado chunky, that’s okay too.
Serve the Garlic Guacamole with your favorite tortilla chips or pita chips.
*Makes about 2/3 cup of guacamole, but the amount will vary based on avocado size.
