We have an unusual restaurant that is a combination of Mexican food and Italian food. They make a great pizza! We order pizza from them probably about twice a month. We also started ordering their antipasto salad. It’s like pizza on a salad! I’m able to get pizza-tasting flavor, without all of the calories of the crust, all on a salad! (I can’t say this salad is low-cal, because I don’t know, honestly. But I feel better about a eating a salad than pizza.)

As Jon and I are devouring our antipasto salad take-out, I proudly tell him, “I could make this.” (Big surprise; right?)

Basically all we do is put a bunch of pizza toppings on top of lettuce. Easy and delicious, right?

No specific measurements here this time; just use as little or as much as you like. If there’s an ingredient you don’t like, leave it out. I don’t like black olives, but Jon sometimes does, so that’s something that could be added if you like.

Lettuce makes a great food canvas and this a perfect warm-weather, summertime dish!

Ingredients:
Chopped lettuce (about 1 cup per person)
Pepperoni slices
Deli ham slices, cut into bite-sized pieces
Red onion, chopped or sliced thinly
Tomato, chopped
Mushroom, chopped or sliced thinly
Bell pepper, chopped or sliced thinly
Mozzarella cheese, shredded
Italian dressing (use your favorite kind, we used Ken’s Italian Dressing)

 

Antipasto salad

Spread lettuce out onto a platter. (Remember, I like my salads on platters, because I think they’re prettier that way.)

Top with the lettuce with the additional ingredients. Serve the dressing on the side to allow everyone to use their desired amount.
