I can remember watching a can of salmon being opened and poured into a bowl. It was always my job as a kid to crush up the crackers to add to the canned salmon and beaten egg. The mixture was always being formed into salmon patties (salmon cakes) and pan-fried. Growing up in the Midwest, we often had salmon patties, using salmon from a can. That was pretty much the only way I had eaten salmon until I was a teenager and tried grilled salmon from a restaurant. I’ve never gone back to canned salmon.
I still like a good salmon patty and making it into a burger, but using fresh salmon. It’s the only way to go!
Ingredients:
1 and ½ lbs fresh salmon
1 egg, beaten
¼ cup roasted red bell pepper (from a jar is fine), diced
½ tsp dried dill
½ tsp granulated garlic
¼ tsp salt
¼ tsp ground black pepper
1 tsp parsley flakes
¼ tsp Old Bay Seasoning
2/3 cups panko breadcrumbs
Vegetable oil
4 sandwich buns
Your favorite burger toppings, such as: Sliced tomatoes, lettuce, onion, mayonnaise, tarter sauce, etc.
Using a fork, pull the salmon away from the skin. Place the salmon into a mixing bowl.
Add in the rest of the ingredients and stir until combined.
Form into four patties.
Heat vegetable oil in a skillet on medium-high heat. (You want enough oil to come up about ¼ of an inch in the skillet.) To test the oil to see if it is hot enough, I sprinkle in a few breadcrumbs to see if they bubble and sizzle; if they do, the oil is ready. Reduce the heat to medium.
Gently place the patties into the oil. Cook for about 3-4 minutes, or until golden brown. Turn over and cook another 3-4 minutes, again until golden brown on that side. Move to a plate lined with paper towel to allow excess oil to drain.
Serve the Salmon Burger on a sandwich bun with your favorite toppings. I used lettuce, tomato, and mayonnaise for mine!
