This is a really simple dish and there’s nothing fancy about it at all. Sometimes I think those are the best meals. I’m not really sure how this meal came about. I’ve seen many different versions of it at family pitch-ins and have seen friends post pictures of their versions on social media. One thing I do know, is that my uncle made it one time and sautéed onions with the sausage, creating an extra layer of flavor that is fabulous! I won’t make it any other way now.
This is my version! I hope you like it!
Ingredients:
2-14 oz cans green beans (don’t drain the liquid, you’ll use that too)
1-14oz can diced potatoes (don’t drain the liquid, you’ll use that too)
7 oz skinless smoked sausage, chopped into bite-sized pieces
¼ cup chopped onion
Cornbread for serving
Makes about 5 servings
On medium-high heat, caramelize the smoked sausage. You should start to see some browning on the sausage. Add in the onion and sauté for about 1-2 minutes (until they are translucent).
In a saucepot, combine the green beans (and the liquid), potatoes (and the liquid), sausage, and onions. Heat on medium heat and bring to a boil. Reduce to a simmer, and cook for about 10- 15 minutes.
Spoon into serving bowls and serve with cornbread. I like to crumble the cornbread on top of my Smoked Sausage, Green Beans, and Potatoes.
