Many weekend mornings, I would ask my dad to make banana pancakes for breakfast. His were always the best because he mashed the banana and added it to the batter, instead of chopping it. The banana flavor went throughout the pancake rather than just getting the flavor when you bit into a piece.
Banana pancakes are by far my favorite type of pancake. These pancakes have a familiar taste of banana bread to them. Yum!
Ingredients:
1 and ½ cups all purpose flour
2 tsp baking powder
2 tbsp sugar
½ tsp ground cinnamon
¼ tsp salt
2/3 cup milk
1 egg
1 tbsp vegetable oil
1 tbsp sour cream
1 large ripe banana
Non-stick cooking spray
Butter and pancake syrup for serving
Sift together the flour, baking powder, sugar, cinnamon, and salt. Set aside.
Next, whisk together the milk, egg, vegetable oil, and sour cream. Set aside.
Mash the banana with a fork until smooth.
Add the milk mixture to the banana and whisk together.
Add the banana mixture to the dry ingredients. Stir until incorporated. Let rest about 5 minutes.
Heat a cast-iron skillet, (If you don’t have one, get one; it changed my cooking life!), on medium heat. Spray with non-stick cooking spray.
Add pancake batter to skillet by the 1/3 cup full. This makes about 6 pancakes.
Flip halfway through cooking.
Stack your banana pancakes on a plate for a simple, yet gorgeous presentation.
Serve with a pad of butter and pancake syrup.
