Ever since I tried mint chocolate chip ice cream as a kid, I have been hooked on the flavor combination. If it is mint chocolate, flavored I am there. I love the cool and fresh flavor that mint gives to the rich chocolate.
With winter being here, we have a ton hot cocoa mix in the house. Did you know you can use hot cocoa mix to make chocolate cookies? Pair it with some mint chocolate chips and you’ve got our new Mint Chocolate Chip Hot Cocoa Cookies!
Ingredients:
1 stick unsalted butter, room temperature
½ cup granulated sugar
½ cup brown sugar, packed
2.5 oz instant dark hot cocoa mix (if you’re using something like Swiss Miss, it equals two packets)
1 egg
1 and ½ tsp vanilla extract
2 cups all-purpose flour
½ tsp salt
1 tsp baking powder
9oz bag of mint chocolate chips
In a mixing bowl, cream together the butter, sugar, brown sugar, and hot cocoa. I used my stand mixer, but you can use a hand mixer as well.
Add in the egg and vanilla extract. Mix on low speed until combined.
Sift together the flour, salt, and baking powder.
Gradually add the flour mixture to the wet ingredients. Mix on low speed until all is combined. The dough will be thick.
Fold in the mint chocolate chips. (I used the mixer on low to mix in the chips due to the dough being so thick.)
Scoop cookie dough onto a greased baking sheet by the tablespoon full.
Smash the cookies down some with the back of a spoon. The cookies do not spread much during baking.
Bake the cookies on 350 degrees Fahrenheit for 8-10 minutes.
Allow the cookies to cool on a cooling rack before serving.
