Missy’s Slow-Cooker Chili

Even though it’s almost summertime, I really wanted to make chili.  I usually make it in the slow-cooker, so it cooks all day, and the flavors really marry together well.  I like getting off from work and having dinner ready to go.  Everyone makes their chili different, and it is always different in each region of the country (just like barbeque!).  Here’s how I make mine:

28 oz can of peeled, crushed tomatoes

16 oz can of chili beans

10 oz can of diced tomatoes with diced green chilies

1 and ½ lbs of ground beef

¼ tsp salt

½ tsp ground black pepper

1 packet of chili seasoning (use your favorite kind)

½ tsp oregano

1/8 tsp allspice

 

Optional Topping Ingredients:

Sour cream

Sliced jalapenos

Hot Sauce

Shredded cheese

Chopped or diced onion

Chopped green onions

Crackers

 

Brown ground beef in skillet.  Add ¼ tsp salt, 1/2 tsp ground black pepper,  ½ tsp oregano, and 1/8 tsp allspice.  Stir to combine.  Drain the grease from the pan.

In the slow-cooker, pour in the crushed tomatoes.

Add the Rotel.
Add the canned diced tomatoes with diced green chilies.
Add the chili beans
Add the chili beans
Add the ground beef and chili seasoning packet.

Stir to combine.  Cook on low for 4-5 hours.  Turn setting to warm until ready to serve.
