There was a restaurant that my husband and I would go to get an appetizer, called Lobster Pizza. They ended up changing it to a flat bread, and it wasn’t nearly as good. I’ve made my own version of the recipe, and it’s fantastic! It’s great as a main dish or even as an appetizer.
Here’s how to make it:
Pizza dough
2 lobster tails
Extra virgin olive oil
½ cup margarine
2 tsp garlic powder
½ tsp dried dill
2 Roma tomatoes
¼ cup fresh basil
1 cup mozzarella cheese
1/4 cup breadcrumbs or cornmeal
Preheat the oven to 425 degrees F. If using a pizza stone, put the pizza stone in the oven while preheating.
Ingredients:
Pizza dough
2 lobster tails
Extra virgin olive oil
½ cup margarine
2 tsp garlic powder
½ tsp dried dill
2 Roma tomatoes
¼ cup fresh basil
1 cup mozzarella cheese
1/4 cup breadcrumbs or cornmeal
Bring water to a boil and reduce to a simmer. Use enough water to cover the lobster tails. Add the lobster tails. Simmer until the tails turn bright orange, about 5 minutes.
Remove the pan from the heat. Drain the water and allow the tails to cool.
While lobster is cooling, roll out the pizza dough. Drizzle the dough with a little olive oil.
Combine the margarine with the garlic powder and dill. Stir to combine. Spread the garlic butter mixture all over the pizza dough.
Layer the sliced tomatoes and basil on top of dough.
Cut the lobster tails in half and remove the meat. Cut the lobster meat into bite size pieces. Layer the lobster meat onto the pizza.
Sprinkle shredded mozzarella cheese on top of the pizza.
Sprinkle the breadcrumbs or cornmeal onto the heated pizza stone. Carefully transfer the pizza to the preheated pizza stone. Bake on 425 degrees Fahrenheit for about 15-20 minutes, or until the crust is golden brown.
Cut into desired shaped slices and serve.
