Macaroni and cheese is a meal and side dish most everyone loves. We’ve enjoyed it as kids and at all of our family get-togethers.
I would much rather make homemade macaroni and cheese than have it out of a box. It’s not really that hard to make, and it tastes a lot better.
Ingredients:
2 cups uncooked macaroni
2 tbsp butter
2 tbsp flour
1 egg
1 and ½ cups milk, warmed in the microwave for about 20 seconds
2 tbsp sour cream
3 cups grated cheddar cheese (divide into 2 cups and 1 cup portions)
Pinch salt
Pinch ground black pepper
Non-stick cooking spray
Makes about 6 servings.
Bring water to a boil in a saucepan and add the macaroni. Cook until tender.
In a saucepan, melt 2 tbsp butter.
Whisk in 2 tbsp flour and cook for 1 minute.
Stir in the milk. Raise the heat to medium-high. Cook for about 5-10 minutes, stirring occasionally. The milk will start to thicken. Stir in a pinch of salt and ground black pepper.
Stir in 2 cups of the shredded cheddar cheese.
Beat the egg. Add about a tbsp of the cheese mixture to the egg to temper.
Stir the egg into the cheese mixture.
Whisk in the sour cream.
Drain the pasta.
Add the pasta back into the saucepan. Pour the cheese mixture off the macaroni. Stir until combined.
In a baking dish, spray a little non-stick cooking spray. Spoon in the macaroni and cheese.
Top with the remaining 1 cup of cheese.
Sprinkle the breadcrumbs over the top.
Bake on 375 degrees Fahrenheit for about 20 minutes. Remove from the oven and let macaroni and cheese rest for about 5 minutes.
