Baked Cheesy Grits

Another Southern staple I have grown to love is grits!  They’re so versatile.  They can be used at breakfast, lunch, or dinner depending how they’re fixed.  My Baked Cheesy Grits pair nicely with fish or shrimp.  My husband asks me to make them all the time!
Ingredients:
3 cups water
1 cup quick cooking grits
1/8 tsp salt
2 tsp garlic powder
2 cups shredded cheddar cheese, divided into 1 cup portions
1 tbsp unsalted butter
2 tbsp milk
1 egg

Bring the water to a boil. Whisk in the grits, salt and garlic powder. Reduce the heat to low.

Cook for about 5 minutes. The grits will thicken.

Remove from heat. Stir in the butter, milk and 1 cup shredded cheese. Set aside.

In a bowl, beat 1 egg. Carefully temper the egg by slowly adding about ¼ cup of the grits to the egg while whisking the egg. Add the egg mixture back into the pot of grits.

Pour the grits into a greased baking dish.

Top with the remaining 1 cup of cheese.

Bake on 375 degrees Fahrenheit for 30 minutes.

Remove the Baked Cheesy Grits from the oven and allow to rest for about 5 minutes.

Serve with your favorite main entrée. This is great to use for our Shrimp ‘n’ Grits recipe.
