Lemon-Pepper Mahi Mahi, Mashed Garlic Potatoes, and Roasted Green Beans

During this time of year, several people are going meatless for Lent.  I thought I would share this recipe for those of you that are participating.  Enjoy!

Fish:

3 or 4 Mahi Mahi Filets

1 lemon

Salt

Black pepper

Season with a small pinch of salt on each side of fish.  Using a larger pinch, season each side of fish with black pepper.  Zest the lemon.  Season each side of fish with ½ teaspoon of lemon zest.

Juice ½ of the lemon and gently pour juice onto fish.  Don’t worry, the other seasonings should stay on the fish.

Prep the grill by brushing a little vegetable oil on the grates.  This will help keep the fish from sticking.  Grill each filet for 6-7 minutes each side.  The fish should be firm and start to flake when done.  Fish will also be opaque.

Garlic Mashed Potatoes:

4 small potatoes (or 2 large potatoes) peeled and cut into same size chunks

4 tablespoons butter

¼ -½ cup whipping cream, warmed

Salt

2 cloves of garlic smashed

½ teaspoon garlic powder

Cover potatoes with cold water in a saucepot.  Bring water to boil.  Add the smashed garlic cloves.  Boil potatoes until fork tender.  Stir pot occasionally.  This should take about 15-20 minutes.  Be sure to keep watch, because the water tends to boil over if the heat is too high.  Lower the heat if you think the pot is going to boil over.

Roasted Green Beans:

3/4 pound fresh green beans (remove stems on ends)

2-3 tablespoons extra virgin olive oil

Salt

Black pepper

Rinse the green beans under cold water.

Arrange the beans on a baking sheet.  Pour oil onto beans and stir until beans are all covered with oil.  Season beans with a pinch of salt and pepper; stir to combine.

Bake at 350 degrees Fahrenheit for 15 minutes.  Stir the beans at the 7 minute mark.
