During our weekly grocery shopping trip, Jon and I were walking down the baking aisle to pick up some breadcrumbs. We started looking at the boxed and prepackaged desserts, and Jon quickly noticed a pouch of peanut butter cookie mix.
“Oooh, peanut butter cookies! I haven’t had peanut butter cookies in forever!” he said.
He started to pick up the pouch of cookie mix. I quickly told him that I would make him a batch from scratch. He quickly put the cookie mix down, and we proceeded to finish up our grocery shopping.
Since, Jon had to work today, I was able to have a little alone-baking-time in the kitchen. I love being able to bake in the kitchen by myself, because I can make a mess. I don’t have to worry about Jon picking up bowls and ingredients and putting them away before I’m done using them. It drives me CRAZY when he does that!
For the Peanut Butter Cookies, I’m using a variation of our Soft Vanilla Sugar Cookies.
These Peanut Butter Cookies, have a great crispy outside with a very slight crunch, and a very soft and creamy peanut butter inside! I am in LOVE with these cookies!
Ingredients:
1 stick unsalted butter, room temperature
¾ cup creamy peanut butter
1/3 cup sugar
½ cup powdered (confectioner’s) sugar
1 large egg
2 tsp vanilla extract
1 and ¾ cup all-purpose flour
½ tsp baking powder
¼ tsp baking soda
½ tsp salt
Extra 1/3 cup sugar for rolling the cookie dough in
Cream the butter, peanut butter, 1/3 cup sugar, powdered sugar, egg, and vanilla extract together in a mixing bowl.
Sift the flour, baking powder, baking soda, and salt together over a separate mixing bowl.
Stir the dry ingredients in batches of thirds into the wet ingredients. Stir until all ingredients are combined.
Pour the extra 1/3 cup of sugar into a small bowl. Scoop cookie dough out by the tablespoonful and roll into a ball. Roll the peanut butter cookie dough ball in the bowl of sugar until the surface is covered.
Place the sugar-coated peanut butter cookie dough onto a greased cookie sheet. Repeat for the rest of the cookie dough.
Bake the cookies in a preheated 350 degree Fahrenheit oven for about 9 minutes.
Carefully remove the cookies from the oven, and smash the cookies down gently with the back of a spoon. This will create the crackle look to the cookie.
Return the cookies to the oven and bake for another 2 minutes.
Remove the peanut butter cookies from the oven and allow them to cool on the pan for a few minutes. Transfer the beautiful peanut butter cookies to a cooling rack to finish cooling.
Try not to eat the whole batch in one sitting; I dare you!
