As many of you know, I used to work at a grocery store when I was in high school and college. When the grocery store was still owned by the local owners, they made fabulous tea cookies. They had chocolate chip and sugar cookies. I loved them both, but my favorite were the sugar tea cookies. I could eat the whole bag, they were THAT good. When the national grocery store chain bought the stores and took over, they no longer made the cookies. It was very sad. No other cookies have even come close…
Until now…
I had a craving for the little sugar cookies, so why not try to make my own? My differ slightly because they have more of a vanilla taste to them, but the texture is right on. They are soft, with a lovely taste of vanilla.
Ingredients:
1 stick unsalted butter, room temperature
¼ cup sugar
½ cup powdered sugar
1 egg
2 tsp vanilla extract
1 and ½ cups all purpose flour
½ tsp baking powder
¼ tsp baking soda
½ tsp salt
In a bowl, mix the butter, sugar, powdered sugar, egg, and vanilla extract together. You can use an electric mixer if you’d like.
In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
Gradually stir in the flour mixture into the wet ingredients, stirring until all is incorporated.
Spoon out tablespoonfuls of the cookie dough onto a greased baking sheet. Place about 1-2 inches apart.
Bake in a preheated 350 degree Fahrenheit oven for 8-10 minutes.
Remove the baking sheet from the oven and allow the cookies to cool for a few moments.
Using a spatula, transfer the cookies to a cooling rack until they are completely cooled.
Store the cookies in an airtight container (if you don’t eat them all at once; it’s hard not to).
