Country Hash Brown Casserole

This week we are goin’ a little country y’all with our Country Hash Brown Casserole!

Most of us have all had a side of hash brown casserole from that country store restaurant that is at most interstate exits. It is so delicious and comforting. I’ve always wanted to make my own version of it at home so I could have a big ol’ pan of it to munch on!

This hash brown casserole is a great double-duty dish, meaning it works well as a dinner side dish or as a breakfast dish.

So let’s get cookin’ y’all!

Ingredients:

1lb and 14 oz bag frozen shredded potato hash browns
½ cup chopped onion
2 10.75 oz cans condensed cheddar cheese soup
¼ cup sour cream
2 tbsp milk
1 cup shredded cheddar cheese, divided
½ tsp ground black pepper
4-6 slices cooked bacon, chopped
½ cup fried onions

3 tbsp unsalted butter, melted

Combine the cheddar cheese soup, sour cream, ½ cup shredded cheese, milk, melted butter, and ground black pepper in a mixing bowl. Stir until combined.

In a large mixing bowl, combine the potatoes, bacon, and onion.

Pour the cheese soup mixture over the potatoes. Stir until all the potatoes and cheese are combined fully.

Transfer the hash brown mixture to a greased casserole dish. Top the potatoes with the remaining ½ cup shredded cheddar cheese.

Bake on 375 degrees Fahrenheit for 40 minutes. Top the casserole with the fried onions and bake another 5 minutes.

Allow the Country Hash Brown Casserole to cool about 10 minutes before serving. It will be extremely hot.
